8 Healthy Salmon Sheet Pan Weeknight Dinner Recipes
These healthy salmon sheet pan weeknight dinner recipes are the fastest way I know to get salmon and vegetables on the table, because both roast on one pan in about twenty minutes.
From a lemon garlic salmon to a honey mustard version, a lemon dijon bake, and a salmon with asparagus and smashed potatoes, they’re a full dinner with almost no cleanup.
Here are the eight I make most!
Salmon cooks fast, so the vegetables usually get a head start in the oven and the salmon joins them for the last twelve minutes or so.
That timing is the whole recipe, and it means the fish comes out just done while the vegetables are roasted through.

1. Sheet Pan Salmon and Potatoes with Veggies
Salmon fillets roast alongside baby potatoes and a mix of vegetables, with the potatoes started early so they crisp before the fish goes on.
It’s a complete dinner, protein, starch, and vegetable, on one pan.
The potatoes need a good head start, since they take twice as long as the salmon.
Lemon and dill over the top to finish!
2. Salmon Sheet Pan Dinner
Salmon, asparagus, and cherry tomatoes roast together in garlic butter for a bright, quick dinner.
The asparagus and tomatoes cook in the same time as the salmon, so everything goes on at once.
A garlic butter brushed over the fish keeps it moist in the oven.
A squeeze of lemon right before serving.
3. Sheet Pan Salmon and Asparagus with Smashed Potatoes
Baby potatoes get boiled and smashed, then roasted crispy, and the salmon and asparagus join them for the last stretch.
The smashed potatoes are the extra step, and the crispy edges are worth it.
Everything finishes on the same pan at the same time.
A herby sauce spooned over the whole tray.
4. Honey Mustard Salmon
Salmon and green beans roast under a honey mustard glaze that caramelizes on the fish in the heat of the oven.
The honey mustard is the whole flavor, sweet and tangy at once.
Brush it on thick so it glazes as it bakes.
It’s the salmon my kids eat without complaint!
5. Sheet Pan Salmon with Broccoli, Carrots, and Peppers
Salmon roasted with a colorful mix of broccoli, carrots, and peppers, all tossed in olive oil and herbs.
It’s the everyday version, and it works with whatever vegetables are in the fridge.
Cut the vegetables small so they roast in the short time salmon takes, or start them early.
Lemon wedges on the side.
6. Lemon Dijon Salmon and Potatoes
Salmon and baby potatoes roast in a lemon and dijon sauce that keeps the fish moist and flavors the potatoes.
The potatoes start first, and the salmon goes on once they’re nearly done.
The dijon and lemon together cut the richness of the salmon.
Fresh parsley over the pan at the end.
7. Sheet Pan Teriyaki Salmon
Salmon and vegetables roasted under a teriyaki glaze that turns sticky and caramelized in the oven.
The sweet, savory glaze is a change of pace from the lemon and herb versions on this list.
Brush it on toward the end so it glazes without burning.
Sesame seeds and green onions over the top to serve.
8. Sheet Pan Salmon with Green Beans and Potatoes
Salmon, green beans, and potatoes roast together with lemon and garlic for a classic, light dinner.
The potatoes go in first, the green beans and salmon join partway through.
It’s the dinner I make when I want something healthy that still feels like a proper meal.
Lemon over everything at the end.
Notes on Sheet Pan Salmon
Salmon roasts fast, usually twelve to fifteen minutes at 400 degrees, so hardy vegetables like potatoes and carrots need a head start before the fish goes on.
Quick vegetables like asparagus, green beans, and cherry tomatoes cook in the same time as the salmon, so those can go on together.
The fish is done when it flakes with a fork and still looks moist in the middle, and it keeps cooking a little after it comes out.
Leave the skin on while it roasts, since it protects the fillet, and it slides right off after if you don’t want it.
A heavy half sheet pan gives the salmon and vegetables room to roast in one layer.
Line it with parchment so the fish lifts off clean, and use a thin fish spatula to serve it in one piece.
A thermometer reads 125 to 130 degrees for salmon that’s just done, and a citrus squeezer gets the most out of the lemon every one of these needs.
Buy salmon in one large fillet and cut it into portions yourself, which is cheaper than the pre-cut pieces.
