8 Healthy Sheet Pan Shrimp Dinner Recipes
These healthy sheet pan shrimp dinner recipes are about the fastest dinner in this whole cluster, because shrimp cooks in six or seven minutes and the vegetables just need a head start.
From a shrimp fajita tray to a honey garlic shrimp, a Mediterranean version, and a whole shrimp boil on a pan, they’re a light dinner that’s done almost before the oven finishes preheating.
Here are the eight in my regular rotation!
Shrimp is the quickest protein there is, so the whole method is roasting the vegetables until they’re nearly done and then adding the shrimp for the last few minutes.
Overcooked shrimp turns rubbery, so these come out of the oven the moment the shrimp turns pink and curls.

1. Sheet Pan Shrimp Fajitas
Shrimp, bell peppers, and onion roasted with fajita seasoning, then piled into warm tortillas at the table.
The peppers and onion roast first, and the shrimp joins for the last five minutes.
It’s a fajita night with almost no standing at the stove.
Lime, avocado, and cilantro to build each one!
2. Sheet Pan Shrimp
Shrimp roasted with broccoli and a lemon garlic butter for a simple, light dinner over rice or on its own.
The broccoli gets a head start, and the shrimp cooks in the last stretch.
A garlic butter tossed through everything at the end.
Lemon over the top, and it’s dinner in twenty minutes.
3. One Pan Roasted Shrimp and Veggies
Shrimp roasted with a colorful mix of broccoli, carrots, and peppers, tossed in garlic and olive oil.
It’s the everyday version that works with whatever vegetables are around.
Keep the vegetable pieces on the smaller side so they finish in the short window before the shrimp joins them.
A squeeze of lemon and a sprinkle of parmesan.
4. Sheet Pan Mediterranean Shrimp
Shrimp roasted with cherry tomatoes, olives, and feta for a bright, briny dinner with Mediterranean flavors.
The tomatoes burst and the feta softens while the shrimp cooks.
Serve it over orzo or with crusty bread to catch the juices.
Fresh oregano and lemon to finish.
5. Sheet Pan Shrimp Boil
Shrimp, smoked sausage, corn, and baby potatoes roasted with Old Bay for a shrimp boil with none of the boiling.
The potatoes and sausage roast first, then the corn, and the shrimp goes on last.
It’s a whole summer cookout on one pan.
Melted butter and lemon for dipping!
6. Sheet Pan Honey Garlic Shrimp
Shrimp and broccoli roasted in a honey garlic sauce that glazes everything in the heat of the oven.
The sauce is sweet and garlicky, and it clings to the shrimp as it cooks.
Serve it over rice and spoon the pan sauce on top.
Sesame seeds and green onions to finish.
7. Garlic Parmesan Roasted Shrimp and Zucchini
Shrimp and zucchini roasted with garlic and parmesan, a low carb dinner that’s still filling.
The zucchini roasts down and the parmesan browns on the shrimp.
Cut the zucchini thick so it doesn’t turn to mush before the shrimp is done.
A squeeze of lemon at the end brightens it.
8. Sheet Pan Cajun Shrimp
Shrimp and vegetables roasted in a bold Cajun seasoning for a dinner with real smoky heat.
The spice blend does all the work, coating the shrimp and everything around it.
Give the vegetables a head start, then add the shrimp for the last few minutes.
A squeeze of lemon to cut the spice, and rice on the side.
Notes on Sheet Pan Shrimp
Shrimp cooks in six or seven minutes at 400 degrees, so it goes on the pan last, after the vegetables have had their head start.
It’s done the moment it turns pink and curls into a loose C, and any longer than that turns it rubbery.
Thaw frozen shrimp under cold running water while the vegetables roast, and pat it dry so it browns in the oven.
Peeled and deveined shrimp saves the work, and tail-on looks nicer while tail-off is easier to eat.
A heavy half sheet pan gives everything room to roast in one layer.
Line it with parchment for easy cleanup, and keep a citrus squeezer nearby since every one of these wants lemon.
A jar of Old Bay is the shortcut to the shrimp boil, and a microplane handles the garlic and parmesan.
Buy frozen shrimp in a bag and keep it in the freezer, since it thaws in minutes and is cheaper than fresh at most stores.
