9 Healthy High Protein One Pot Meals

These healthy high protein one pot meals are what I cook on the weeks I’m trying to eat well and still only wash one pan.

From a ground turkey and sweet potato skillet to an egg roll in a bowl, skillet chicken fajitas, a Greek lemon chicken and rice, a turkey chili, and a cajun shrimp and rice, each one puts a real serving of protein in the pot with the vegetables and starch cooked right alongside it.

Here are the nine I rotate through!

The pattern in most of these is lean protein, a lot of vegetables, and a modest amount of rice or potato, cooked together so the protein flavors everything else.

None of them are diet food, and nobody at my table has ever noticed that they were the healthy option.

1. Ground Turkey and Sweet Potato Skillet

Ground turkey browns with onion, then diced sweet potato, black beans, and southwest spices cook in the same skillet until the sweet potato is soft.

It’s a full plate of protein, fiber, and slow carbs in one pan, and it’s done in about twenty-five minutes.

Avocado and a squeeze of lime on top.

It portions into containers for lunches through the week!

2. Egg Roll in a Bowl

Ground turkey or pork cooks with a bag of coleslaw mix, garlic, ginger, and soy sauce, and it’s the inside of an egg roll without the wrapper or the frying.

The cabbage cooks down in a few minutes and soaks up the sauce, and the whole thing takes fifteen minutes from package to plate.

A drizzle of sesame oil and sliced green onions at the end.

It’s low carb on its own and a bowl of rice makes it a bigger dinner.

3. Skillet Chicken Fajitas

Sliced chicken breast, bell peppers, and onion cook in one hot skillet with fajita seasoning until the chicken is done and the peppers have a little char.

It’s a lot of lean protein and a lot of vegetables with nothing else, and the tortillas or rice are up to you.

Cut the chicken thin so it cooks fast and stays juicy.

Lime, cilantro, and a spoonful of Greek yogurt in place of sour cream.

4. Greek Lemon Chicken and Rice

Chicken thighs with lemon, garlic, and oregano brown in the pan, and rice cooks underneath them in the juices and broth.

Thighs bring more flavor than breasts and the rice takes on all of it.

Cucumber, tomato, and feta on top turn it into a full Mediterranean plate.

It looks like weekend cooking and takes a weeknight amount of effort.

5. Turkey Chili

Ground turkey, two kinds of beans, tomatoes, peppers, and chili spices simmer in one pot for about half an hour.

The beans double the protein and the fiber, and the turkey keeps it lean without anyone missing the beef.

A spoonful of thick yogurt on top does what sour cream would, and cheese is optional.

It freezes flat in bags and reheats for a week of lunches.

6. Cajun Shrimp and Rice Skillet

Rice cooks in broth with onion, peppers, and cajun seasoning, and the shrimp go in for the last few minutes so they stay tender.

Shrimp is about the leanest protein there is, and it cooks in three minutes, which makes this one of the fastest dinners on the list.

Frozen shrimp thaws under cold water while the rice cooks.

Green onions and a squeeze of lemon on top!

7. Ground Turkey and Potato Skillet

Diced potatoes crisp in the skillet first, then ground turkey, onion, and peppers cook with them until everything is browned and seasoned.

It’s a hash, and it’s dinner or breakfast depending on the hour.

A fried egg on top adds more protein and makes it a plate.

Hot sauce, and it’s done in half an hour.

8. Buffalo Chicken Pasta

Chicken breast, pasta, buffalo sauce, and a little cream cheese cook together in one pot, and it’s the high protein pasta night in my house.

Use a protein pasta or a chickpea pasta and the numbers climb without changing the dinner.

Celery and carrots on the side for the crunch.

9. Shrimp, Peas, and Rice

Rice cooks with garlic and broth, peas go in near the end, and the shrimp cook on top for the last few minutes.

It’s mild, quick, and the kind of dinner that gets eaten by everyone including the picky ones.

Parmesan and lemon zest at the end.

A weeknight dinner in twenty-five minutes with one pot.

Notes on High Protein One Pot Cooking

Chicken breast, chicken thighs, ground turkey, shrimp, and beans are the proteins here, and a pound of any of them feeds four with a real serving each.

Shrimp and thin-sliced chicken breast cook in minutes and go in last, and ground turkey and thighs go in first so they have time to brown.

Beans and lentils added to a meat dish stretch the protein and the budget at the same time.

Swapping sour cream for thick yogurt on the chili, fajitas, and skillets adds protein without anyone noticing the difference.

A 12-inch skillet with a lid is the one pan almost every recipe on this list uses.

An instant read thermometer keeps the chicken from being overcooked in the name of being safe.

A kitchen scale helps portion the meat if you’re tracking, and glass containers hold the leftovers, which all of these make.

I buy ground turkey and shrimp in bulk and keep them in the freezer, since they’re the two proteins that go from frozen to dinner fastest.
