8 Simple Sheet Pan Breakfast Recipes

These simple sheet pan breakfast recipes are how I get a whole family fed in the morning without standing at the stove flipping things one at a time.

From sheet pan pancakes to breakfast burritos, customizable baked eggs, and a maple bacon French toast, they all bake at once on one pan and come out ready to cut and serve.

Here are the eight I make most!

The whole idea of a sheet pan breakfast is cooking for a crowd all at once, whether that’s a dozen pancakes with no flipping or a tray of eggs that would take three skillets on the stove.

Most of these can be assembled the night before and baked in the morning, which is what makes them work for a holiday or a full house.

1. Sheet Pan Pancakes

Pancake batter poured into a sheet pan, topped with berries, and baked into one big pancake you cut into squares, no flipping and no standing at the griddle.

Everyone’s pancakes are done at the same time, which never happens on a griddle.

Let different sections have different toppings for picky eaters.

Warm syrup over the top, and breakfast is served!

2. Sheet Pan Breakfast Burritos

Eggs, sausage, peppers, and cheese baked on a sheet pan, then scooped into tortillas and rolled, a whole batch of burritos at once.

The filling bakes in one layer while you warm the tortillas.

Wrap and freeze the extras for grab-and-go mornings.

A creamy chipotle sauce inside makes them.

3. Customizable Sheet Pan Eggs

Whisked eggs poured onto a sheet pan with whatever mix-ins you like, baked flat, and cut into squares for sandwiches or plates.

It’s the easiest way to make eggs for a crowd, and every square comes out the same.

Divide the pan and add different toppings to each section.

They stack onto a biscuit or an English muffin for a breakfast sandwich.

4. Sausage, Egg, and Cheese Muffins

Eggs, sausage, and cheese baked and cut to fit English muffins for homemade breakfast sandwiches.

Bake a full pan and you have a week of breakfast sandwiches ready.

They reheat in the microwave in a minute on a busy morning.

A little hot sauce inside, and they beat the drive-through.

5. Sheet Pan Breakfast Egg Nests

Shredded potatoes formed into nests with an egg cracked into each one, baked until the potatoes crisp and the eggs set.

The potato nests hold a soft yolk in the middle, which is the whole appeal.

Season the potatoes well before they go in.

Cheese and chives over the top to serve.

6. Sheet Pan Breakfast Sandwiches

A whole tray of breakfast sandwiches assembled and baked at once, with eggs, cheese, and meat between rolls.

Assemble them in the pan, cover, and bake until the cheese melts and the rolls toast.

It’s the way to make a dozen sandwiches for a group with no assembly line.

Cut them apart and serve warm.

7. Sheet Pan Bacon and Egg Breakfast Hash

Diced potatoes and bacon roasted until crisp, with eggs cracked over the top for the last few minutes.

The potatoes and bacon roast together while the eggs wait, then go in to finish.

Pull it when the whites are set and the yolks still soft.

Everything you’d cook in three pans, on one!

8. Maple Bacon French Toast Bake

Cubed bread soaked in a maple custard, topped with bacon, and baked into a sweet and savory French toast for a crowd.

Assemble it the night before and bake it in the morning.

The bacon crisps on top while the custard sets below.

More maple syrup over the top to serve.

Notes on Sheet Pan Breakfast

Most of these can be assembled the night before and baked in the morning, which is what makes them work for a holiday or a full house.

Egg dishes bake flat and cut into even squares, so a whole pan of eggs replaces three skillets and everyone eats at the same time.

Grease the pan well or line it, since baked-on egg and cheese are miserable to scrub off later.

The sandwiches and burritos freeze well, so a batch on Sunday covers the whole week of mornings.

A heavy half sheet pan with a rim is what holds the batter and the custard without spilling.

Line it with parchment for the eggs and pancakes so they lift right out, and keep wraps on hand for the freezer burritos.

An offset spatula spreads batter flat, and a bench scraper cuts the eggs and pancakes into even squares.

Reheat the make-ahead ones in the oven or a toaster oven to keep them from going soft in the microwave.
