8 Sheet Pan Sausage and Veggies Weeknight Dinner Recipes

These sheet pan sausage and veggies weeknight dinner recipes are the fastest dinner I know, because smoked sausage is already cooked and only needs to brown and heat through in the oven.

From a classic sausage and veggies tray to a roasted sausage and potatoes, a maple dijon version, and a chicken sausage bake, everything goes on one pan and comes out in about half an hour.

Here are the eight we rotate through!

Because the sausage is already cooked, the oven only has to brown it and soften the vegetables around it, which is why these come together so fast.

Slice the sausage into coins so it gets more browned edges, and cut the vegetables to match how long each one takes.

1. Sheet Pan Sausage and Veggies

Sliced smoked sausage, potatoes, peppers, and onion tossed in oil and Italian seasoning and roasted until the sausage is browned and the potatoes are crisp.

It’s the whole dinner on one pan, and it’s the one I make when there’s no plan.

Cut the potatoes small so they finish with everything else.

A shake of parmesan over the top when it comes out!

2. Sheet Pan Sausage and Veggies with Sweet Potato

Smoked sausage, sweet potato, zucchini, and bell peppers roast together, and the sweet potato caramelizes at the edges.

The sweet potato and the smoky sausage are a good match, one sweet and one salty.

The zucchini goes on a little later so it doesn’t turn to mush.

It’s a colorful pan and a balanced dinner.

3. One Pan Sausage and Veggies

Sausage, broccoli, and potatoes roasted with garlic and herbs, and the broccoli gets crispy edges in the hot oven.

Roasted broccoli is a different thing from steamed, and this is the easiest way to get it.

The potatoes start first and the broccoli joins partway through.

A squeeze of lemon over the broccoli at the end.

4. Roasted Sausage and Potatoes

Just sausage, potatoes, and onion, roasted simply until everything is golden and the onions have gone sweet.

It’s the plainest version and my favorite, since the potatoes cook in the sausage fat.

Season it well and don’t crowd the pan.

Grainy mustard on the side, and it’s dinner.

5. Maple Dijon Sausage and Veggies

Sausage, sweet potato, and Brussels sprouts roasted in a maple and dijon glaze that turns sticky and sweet in the oven.

The maple and mustard together are what make this one worth the extra minute of whisking a glaze.

Toss everything in the glaze before it goes on the pan.

It’s a fall dinner I make on repeat once the weather turns!

6. Cajun Sausage and Veggies

Smoked sausage roasted with peppers and vegetables in a bold Cajun seasoning that gives the whole pan a smoky kick.

It’s the one to make when the classic version feels too plain and you want some heat.

Add a pinch more cayenne if your family likes it hot.

A squeeze of lemon at the end to cut the spice.

7. Italian Sausage with Peppers and Onions

Italian sausage roasted with sweet peppers and onions until everything softens and caramelizes, with no potatoes to fill up on.

It’s the classic sausage and peppers, done on a pan in the oven.

Pile it onto a roll or serve it over polenta or pasta.

A little fresh basil over the top.

8. Sheet Pan Chicken Sausage and Veggies

Chicken sausage, baby potatoes, green beans, and peppers roasted with garlic and Italian herbs.

It’s the leaner cousin of the classic, and my family can’t tell the difference.

The green beans go on late so they stay bright.

Parmesan over the whole pan at the end.

Notes on Sheet Pan Sausage Dinners

Kielbasa and other smoked sausages go into the oven already cooked, so a hot pan just crisps the edges and warms them through.

Slice the sausage into coins or half moons so it gets more surface area to brown against the hot pan.

Cut the vegetables to match their cook time, with potatoes and root vegetables in smaller pieces and quick ones like zucchini and green beans added partway through.

Sausage gives off salt as it roasts, so wait until the end to add any more.

A heavy half sheet pan browns better than a thin one that warps in the heat.

Line it with parchment and the cleanup is nothing, since sausage fat is the hardest thing to scrub off a bare pan.

Slice the sausage on a big cutting board and toss the vegetables in oil in a large bowl before they go on.

The leftovers reheat in the oven and make a good base for a grain bowl the next day.

The quick crockpot dinners with ten minutes of prep post covers the same kielbasa in a slow cooker.

My hearty crockpot beef stew with root vegetables is the cold weather dinner I make alongside these.

And the slow cooker chicken and dumplings is the comfort dinner for a night off from the oven.
