10 Crockpot High Protein Dinners

These crockpot high protein dinners are the ones I lean on when I’m trying to eat more protein without eating more plain chicken breast.

From a turkey chili with beans to Greek chicken bowls, beef and broccoli, and chicken lettuce wraps, they each land somewhere around thirty to forty grams of protein a serving and taste like dinner, not like a diet.

Here are the ten that stay in the rotation!

I’m not counting macros for anyone here, and the numbers depend on your portions and your brand of chicken.

What I can say is that every recipe below is built around meat, beans, or both, with the starch as the side and not the center.

1. Southwest Turkey Chili

Ground turkey, black beans, corn, tomatoes, and a good hit of chili powder and cumin, and it’s the highest-protein bowl on this list.

Brown the turkey first, because it dries out and clumps if it goes in raw, and then it’s six hours on low with no attention.

Avocado and Greek yogurt on top in place of sour cream, and it’s a full dinner for under a dollar a serving.

It freezes better than almost anything I make, so I portion half of every batch.

2. Greek Chicken Bowls

Chicken thighs cooked in lemon, garlic, oregano, and olive oil, then piled into bowls over cucumber, tomato, red onion, and feta with tzatziki on top.

Rice or quinoa underneath, or a pile of greens if you’re keeping the carbs low.

The tzatziki is what makes it feel like a meal and not a salad, and I buy it.

It’s the lunch I pack four days a week, and I’m not tired of it yet!

3. Beef and Broccoli

Thin-sliced flank steak in a soy, garlic, and ginger sauce, with broccoli added at the end so it stays green and has some bite.

It’s takeout without the sugar bomb, and the beef does most of the protein work.

Serve it over rice or cauliflower rice, and go heavy on the broccoli, because it soaks up the sauce and fills the bowl.

4. Chicken Tikka Masala

Chicken cooked in a tomato and yogurt sauce with garam masala, ginger, and garlic, and it’s one of the few high-protein dinners that also feels indulgent.

The yogurt marinade adds protein and tenderizes the chicken at the same time.

Use full-fat Greek yogurt in place of some of the cream at the end, and the sauce is still rich.

Basmati rice or cauliflower rice, and a piece of naan if it’s not a strict week.

5. Chicken Lettuce Wraps

Ground chicken cooked with hoisin, soy, ginger, and water chestnuts, scooped into butter lettuce leaves, and it’s the restaurant appetizer turned into a dinner.

The lettuce keeps it light, so I eat six of them and still feel fine.

Add the water chestnuts at the end so they stay crunchy, and pile on shredded carrots and green onions.

A bowl of rice on the side for anyone who wants it, and peanuts on top.

6. White Chicken Chili

Chicken breasts cook with white beans, green chiles, cumin, and broth, and the chicken shreds into the beans so every spoonful is protein.

Greek yogurt stirred in off the heat makes it creamy without turning it heavy.

It’s the chili I make in the summer when red chili feels like too much.

Tortilla strips and a squeeze of lime, and cheese if you’re feeling it.

7. Chicken Fajitas

Chicken breasts, sliced peppers, and onions with fajita seasoning and lime, and the peppers go in late so they hold up.

Skip the tortillas and eat it over a big salad, or over rice, and it’s a lean dinner with a lot of vegetables in it.

My kids get the tortillas, and I get the bowl, and everyone’s happy.

Salsa and a spoonful of Greek yogurt on top.

8. Salsa Verde Chicken Tacos

Chicken breasts under a jar of green salsa with cumin and garlic, cooked until they shred, and served in tortillas or over rice with cabbage and lime.

It’s four ingredients, the chicken does all the work, and the salsa verde adds almost no calories.

Two tacos with a lot of cabbage on top is dinner, and the extra chicken tops a salad at lunch.

9. Carnitas

Pork shoulder cooked with orange, lime, cumin, and garlic, shredded and crisped under the broiler, and it’s the one non-poultry recipe here I make most.

Pork shoulder has more fat than chicken, so trim it well and skim the liquid before you crisp the meat.

Street tacos with onion and cilantro, or a bowl with black beans and slaw, and it holds in the fridge for four days.

The crisping step is what makes it, so don’t skip the broiler!

10. Meatballs and Zoodles

Turkey or beef meatballs cooked in marinara all day, served over spiralized zucchini that gets tossed with the hot sauce right before serving.

The zoodles never go in the crock, because they turn to water if they do.

A quick toss in the hot sauce for a minute is enough to soften them.

Parmesan on top, and it’s spaghetti and meatballs with the pasta swapped out.

Notes on High Protein Dinners in a Slow Cooker

Lean meat dries out fast in a slow cooker, so chicken breasts and ground turkey are done after three or four hours on low, not eight, and thighs and pork shoulder handle the long cook.

Beans add protein and fiber to any of these, and canned beans join during the final hour so they don’t turn to paste.

Greek yogurt in place of sour cream or cream at the end adds protein and takes away nothing, as long as it’s stirred in off the heat so it doesn’t curdle.

A kitchen scale is the only honest way to know what a serving is, and I weigh the cooked meat before it goes into the containers.

I portion these into glass meal prep containers on Sunday, and four lunches come out of one crock.

Swap rice for cauliflower rice or a bag of spiralized zucchini under any of the saucy ones, and the protein per plate goes up because there’s room for more of the main thing.

An instant-read thermometer at 165 degrees is the difference between chicken that’s juicy and chicken that’s chalk.
